
Quick Brownies

This is a quick recipe using a 18x11x5cm foil tin, serves 2-4
Ingredients
50g unsalted butter
50g soft light brown sugar
1 tbsp maple or golden syrup
3 tbsp plain flour
3 tbsp cocoa powder
1 large free-range egg
1 tsp vanilla extract
50g walnut pieces (optional)
50g dark or milk chocolate chips
Method
1. Preheat the oven to 170C/150 Fan/Gas 3
2. Warm the butter, sugar and maple or golden syrup in a small pan, stirring occasionally until the butter has melted and the sugar has dissolved.
Remove from the heat.
3. Mix together the flour and cocoa in a small bowl, then beat into the melted butter with a wooden spoon until smooth.
4. In a small bowl, whisk the egg with the vanilla then stir into the pan, making sure everything is well mixed.
5. Fold in the chocolate chips and nuts (if using). Pour the batter into the foil tin.
6. Bake for 15-20 minutes, until it is beginning to come away at the sides and the top has dried a little just around the edges.
7. Transfer to a wire rack and leave to cool, cut into squares and enjoy!
