Moroccan Style Roasted Veg

Cooking time - 30 - 45 minutes

Ingredients
2 large red or orange peppers
2 sweet potatoes
2 red onions
200g/7oz cherry tomatoes
1 tablespoon harissa spice mix
1 tablespoon olive oil
sea salt and ground black pepper
Method
De-seed the peppers and cut into bite size chunks
Scrub the sweet potatoes and cut into bite size chunks
Cut the red onions into bite size chunks
Preheat the oven to 220C/200C Fan/Gas 7
Put the sweet potatoes, peppers, red onions, whole cherry tomatoes, harissa spice mix, oil and salt and pepper on a large baking sheet.
Stir well so the vegetables are well coated in the oil and spice.
Roast for 30 minutes, or until everything is soft and charred, stirring the vegetables halfway through.
Serve on its own or as a spicy side.
